Honestly I find myself replaying lots of fighting games. Street Fighter III, IV, Alpha 2, Ultimate Marvel vs. Capcom 3, Marvel vs. Capcaom, Capcom vs. SNK 2, Super Smash Bros. Brawl, Street Fighter X Tekken, etc. etc.

Oh, I also love replaying through Final Fantasy 3/VI. I even hooked it up my SNES to a projector when I was still a projectionist at my theater so I could beat Kefka again and watch the ending on the big screen.

I like to replay almost every single one of my favorite games, but if I had to choose a few I've replayed a lot off the top of my head...
Chrono Trigger:
The game with like, a dozen endings, a ton of different party combinations to try out all with their own techniques and combos, and one of the most revolutionary games of all time for the new game + feature.
Also my favorite game of all time.
Megaman series:
Boss order. 'Nuff said.
Megaman X series:
Secret items and several different playable characters. Also 'nuff said.
Resident Evil 4:
Tons of awesome minigames, new game +, a hard mode, bonus costumes, and plenty of spots or items you probably will miss- yeah, this game is always fun to replay.
FF1 (PS1 version)/3/5:
Custom job classes and combinations, anyone?
